Monday: Shrimp Scampi (GF noodles) with Roasted broccoli and Cauliflower
Tuesday: Turkey Fajitas on corn tortillas – I will make these Monday night and reheat them in the crockpot on Tuesday because Tuesday is my busy evening. We are also having a spinach salad on the side.
Wednesday: Vegan Potatoe Nachos – These just look delicious and super simple. I’m not going to lie though, I may add cheese, so our’s may not be exactly Vegan 😉 But they will still be meatless and so yummy!
Thursday: Roasted Chickpea and Veggie Brown Rice bowl with Shrimp – I mean, come on, how delish does this look! I can’t wait to try it!
Friday: Honey Lime Zucchini Tacos, I will serve these with corn tortillas or over leftover rice from last night – easy friday night meal!
Saturday: Open Faced Burgers with baked fries and Roasted veggies
Sunday: Creamy Spinach and Cheese Green Chili Enchiladas – This recipe looks simple and delish, but I will make a few modifications; I will use my enchilada sauce, Corn Tortillas and probably add some black beans for flavor, texture and protein
I’m not sure if you have noticed, but lately I have been going through a Mexican, Southwest flavor faze.
It’s getting spicy ova’ here!
